In Thailand, if you buy pineapple from a street vendor, it will often come with a small bag of salt, chilli and sugar mixed together for you to dip chunks into. I’ve tried to recreate that amazing flavour combination here in cocktail form. Perfect for the end of summer!
Ingredients
1 | Pineapple, use 3-4 small chunks (Main) |
¼ | Mangoes, peeled |
3 leaves | Fresh mint |
1 pinch | Sugar |
1 pinch | Chilli flakes (Main) |
1 pinch | Sea salt |
1 serving | Rum, 1 generous shot per drink |
1 serving | Coconut water (Main) |
Directions
- In a small food processor, blend the pineapple, mango, mint, sugar, chilli flakes, and salt, until pureed.
- Fill four glasses with ice and divide the mixture between them.
- Place a shot of rum in each glass and mix with the puree.
- Top with coconut water. Enjoy!
