Prawn kebabs on slaw is a very easy and healthy dinner. You could serve them with soft tacos and a couple of other salads for a larger meal.
Herby slaw
½ | Red cabbages, thinly sliced |
1 large bunch | Mint, roughly chopped |
1 large bunch | Parsley, roughly chopped |
1 large bunch | Coriander, roughly chopped |
2 Tbsp | Roughly chopped nuts, of your choice |
2 Tbsp | Seeds, of your choice |
Dressing
½ cup | Natural yoghurt |
2 Tbsp | Rice wine vinegar, or other vinegar |
1 Tbsp | Sesame oil |
1 pinch | Chilli flakes |
1 | Lime, juice only, or the juice of 1 lemon |
1 pinch | Sea salt and cracked black pepper |
1 pinch | Smoked paprika |
Prawn skewers
8 | Bamboo skewer |
32 | Prawns, shells removed (Main) |
2 Tbsp | Harissa paste |
½ | Lemons, juice only |
1 Tbsp | Olive oil |
1 | Spring onion |
Directions
To make the slaw
Add all ingredients to a bowl, then toss in the dressing.
To make the dressing
Whisk all ingredients together in a small bowl until emulsified. Taste and adjust as necessary.
To make the skewers
- Place 4 prawns on each skewer
- Mix together the harissa, lemon, olive oil and finely chopped spring onion.
- Spread or brush the harissa mixture on to the prawns. Fry on a barbecue or in a frying pan heated to medium-high heat.
- Serve immediately on the slaw.
