Spice rub
1 tsp | Cumin |
1 tsp | Cayenne |
1 tsp | Smoked paprika |
1 tsp | Garlic powder |
1 tsp | Sea salt |
1 tsp | Ground black pepper |
1 Tbsp | Chilli powder |
Peanuts
2 cups | Raw peanuts, skins on (Main) |
1 drizzle | Olive oil, a generous one |
1 Tbsp | Spice rub, use up to 2 Tbsp (Main) |
Directions
- First make the spice rub. In a bowl mix the cumin, cayenne, smoked paprika and garlic powders, sea salt and ground black pepper and chilli powder. Store in an airtight container.
- On a baking tray lined with baking paper, mix the raw peanuts with a good drizzle of olive oil and the spice rub to coat nuts.
- Roast in a hot oven for approximately 25 minutes, or until peanuts have darkened and the skins easily flake off. Cool, jar and crack a beer.
