I love this recipe because it's hearty and healthy, offering meat and veggies to keep you nourished. It's also easy, economical and has a touch of Kiwi in the tamarillos. It is great for a family meal or dinner party.
Ingredients
800 g | Beef, I used lean NZ beef (Main) |
1 Tbsp | Curry powder |
1 Tbsp | Ginger |
1 Tbsp | Mixed spice |
½ Tbsp | Cloves, dried |
2 Tbsp | Brown sugar |
2 Tbsp | Worcestershire sauce |
2 Tbsp | Malt vinegar |
6 | Tamarillos, peeled and chopped |
2 medium | Brown onions, cut into thin rings |
3 | Carrots, peeled and cut into thin slices |
4 large | Potatoes, thinly sliced |
1 kg | Spinach |
Directions
- Cut beef into cubes
- Dredge beef cubes in flour seasoned with the curry powder and the ginger.
- Place in casserole dish and add cloves, salt and pepper, brown sugar, worcestershire sauce and vinegar
- Layer tamarillo, onion and carrot on top with finely sliced potatoes dotted with butter
- Cover and bake for 1.5 hours at 160 degrees celcius or until meat is tender
- Remove cover when meat is tender, brush with melted butter and cook. uncovered for 10-15 minutes at 200 degrees celsius, potato topping should be golden
- Wilted greens: Wash and de stem 1 kg of spinach and place in a large pot with 2 Tbsp of olive oil on high heat, stirring until softened, turn down heat and season with salt and pepper to serve
