Josh says, "Very easy to make, these muffins are extremely moist and delicious. They keep well so having them ready-made makes a great no-fuss breakfast - ideal for Zen Hunters who enjoy a peaceful start to the morning."

Ingredients
250 g | Caster sugar |
250 ml | Vegetable oil |
3 | Eggs |
265 g | Plain flour |
1 Tbsp | Ground cinnamon |
5 g | Bicarbonate soda |
10 g | Baking powder |
1 pinch | Salt |
350 g | Braeburn apples, or another similar apple, grated with the skin on (Main) |
1 large | Apple, peeled and roughly diced (Main) |
Directions
- Line a muffin tray with muffin cases and pre-heat the oven to 210C.
- Using the whisk attachment on the mixer, mix together the caster sugar, oil and eggs until the sugar is dissolved. Then add the flour, cinnamon powder, bicarbonate of soda and baking powder. Mix gently until combined.
- Remove the mixture from the mixer and fold through the grated and diced apple.
- Fill the muffin cases with the mixture and bake for around 14 minutes.
- Cool for a few minutes in the pan before removing from the tray.
