Sophisticated sundae

Ingredients

2	Limes, zest and juice
1 cup	Water
1 cup	Caster sugar
1 splash	Gin (Main)
1	Golden kiwifruit, diced
1 punnet	Blueberries, or use frozen blueberries
4 scoops	Ice cream, feijoa ice cream is recommended

Directions

1. Zest and squeeze the juice of two limes.
2. Put a cup of water and a cup of caster sugar in a pot and add the juice and zest.
3. Bring to the boil and simmer until it makes a syrup.
4. When cool add a good slug of gin. Chill.
5. In a martini glass pile some blueberries, diced golden kiwifruit and 2 scoops of feijoa ice cream.
6. Pour over the gin/lime syrup before serving.
