Quick and easy to prepare in advance.
Ingredients
150 g | Pasta shells, or fusilli, cooked (Main) |
1 cup | Green beans, fresh or frozen, sliced |
300 g | Smoked fish, skinned and boned (Main) |
1 | Capsicum, red or yellow, diced |
1 | Spring onion, diced |
12 | Kalamata olives, pitted |
Dressing
½ cup | Mayonnaise |
½ cup | Sour cream |
¼ cup | Chopped parsley |
1 tsp | Chopped garlic |
1 tsp | English mustard |
Directions
- Cook the pasta according to the packet instructions. Add the beans during the last 3-4 minutes of cooking. Drain well and cool.
- Flake the fish and arrange in a bowl with the vegetables, olives and pasta. Blend the dressing ingredients and add to the salad. Cover and refrigerate for 1-2 hours before serving.
