Ingredients
1 kg | Pork scotch fillet roast (Main) |
1 bunch | Bay leaf |
1 dash | Salt |
4 Tbsp | Rice bran oil |
1 kg | Purple kumara |
4 medium | Courgettes |
1 medium | Carrot |
1 medium | Green capsicum |
Directions
- Rub salt evenly over the meat, Rest the meat on a "bed" of bay leaves and cover top of meat with bay leaves. Grill in covered dish at 50 degrees for five hours for a medium steak.
- Remove bay leaves. Sear the meat in a pan. Slice meat into steaks and pan fry each steak according to how you like your meat done. This was cooked to medium well.
- The juices from the meat is made into an onion sauce to be served with steak. The steak is served with Purple Kumara Mash and .Stir fry courgettes,carrots and green capsicum.
