Pancakes are one of my favourite things to make on the weekend and using my All Good bananas, I experimented with a method I’d seen a few people use online. It completely simplifies pancakes — just eggs, banana and few little extras to bind them together, make these a healthy, filling,naturally sweetened brunch.
Ingredients
2 | Eggs, free-range |
1 pinch | Baking powder |
1 Tbsp | Peanut butter |
200 g | Bananas, mashed (about 2-3 bananas) (Main) |
¼ cup | Flour, I used rice flour |
2 Tbsp | Dark chocolate, roughly chopped, I used Whittaker Dark Ghana, optional |
Directions
- Crack eggs into a mixing bowl and add baking powder. Whisk to combine with a fork. Add the mashed banana, peanut butter and flour and continue mixing.
- Add chocolate if you're using it. Mix together.
- Heat a frying pan to a medium-high heat and add a knob of butter, rice bran oil, or coconut oil. Once pan has heated, cook pancakes in batches, flipping once carefully.
- Serve with yoghurt, honey, maple syrup, and/or additional fresh fruit.
