Ingredients
3 | Sirloin steaks, about 600g, trimmed of fat , look for the Quality Mark (Main) |
2 cloves | Garlic, crushed |
1 stem | Lemongrass, white part only, finely chopped |
1 Tbsp | Soy sauce |
2 tsp | Fish sauce |
2 tsp | Sugar |
4 small | Zucchini, cut into batons (Main) |
4 handfuls | Watercress, be generous |
Directions
- Cut sirloin steaks into pieces (about 4cm x 4cm). Mix together the garlic, lemongrass, soy sauce, fish sauce and sugar, stirring to dissolve the sugar. Add the beef and toss to coat in the marinade, cover and leave in a cool place to marinate for 20 minutes.
- Chargrill the zucchini batons until bite-tender.
- Heat a large frying pan over a high heat and add a dash of oil. Add beef pieces and cook for 1 minute. Turn beef and cook for a further minute, then toss beef around cooking sides for another minute. Pour over remaining marinade.
- Place zucchini and watercress on a platter and top with the beef and its marinade. Pass lemon wedges to dress greens. Serve with your favourite noodles.
