This no-pastry pie is a complete nutritious meal. Any type of sausage can be used and frying them first will give a better richer flavour. Serve with buttered bread and some salad greens.
Ingredients
4 Tbsp | Rice bran oil |
4 | Sausages, or frankfurters (Main) |
½ cup | Onions, diced |
1 tsp | Garlic, grated |
5 | Eggs |
3 | Courgettes, grated |
1 ½ cups | Cheddar cheese, grated (Main) |
2 Tbsp | Chopped fresh herbs, any combination of parsley, chives, rosemary, and thyme, or use 2 tsp of dried mixed herbs |
½ cup | Self raising flour |
Directions
- Heat 2 tablespoons of oil in a large frying pan. Cook sausages until browned. Remove, cool and chop.
- Add remaining oil to the pan and cook onion gently without colour for 5 minutes. Add garlic and sausages.
- Whisk eggs, add courgette, 1 cup cheese, herbs, flour, and season. Spread evenly over sausages and onions.
- Sprinkle over the extra ½ cup of grated cheese then bake at 180C for 35-40 minutes.
