Smoked salmon has to be one of the best ingredients to have in your artillery when you are short on time to cook dinner. This is such a great go-to dish and one of our family’s favourites.
Ingredients
250 g | Wholemeal pasta (Main) |
3 Tbsp | Creme fraiche |
2 cups | Frozen peas |
1 | Lemon, zested |
200 g | Smoked salmon, broken into pieces |
¼ cup | Dill leaves |
Directions
- Bring a large pot of salty water to the boil and cook pasta per packet instructions. Strain, reserving 1 cup of the starchy cooking water.
- In a large, deep pan melt crème fraiche over a medium heat. Add half a cup of the pasta water and add the peas. Warm slightly and add the pasta. Add lemon zest and cook for 3-5 minutes or until peas are heated through and the sauce starts sticking to the pasta. Add more pasta water if the sauce needs loosening.
- Empty onto serving dish and top with salmon. Garnish with a few pieces of dill.
