This delicious pasta dish as a quick and easy crowd pleaser for the whole family to share, and equally impressive for entertaining friends.
Ingredients
400 g | Salmon (Main) |
200 g | Broccoli, cut into small florets |
300 g | Pasta, Penne, Fusilli, Conchiglie and Tagliatelle all work well with this recipe |
250 g | Creme fraiche |
1 handful | Parmesan cheese, finely grated |
Directions
- Place a pot of water on to boil and cook the pasta according to the packet instructions, adding the broccoli florets for the last couple of minutes.
- Pan fry the salmon for 3-4 minutes on each side, or cover and cook in the microwave on high for 3-4 minutes, or cook in the oven at 180C for 20 minutes.
- While the pasta and salmon are cooking, mix together the creme fraiche and grated parmesan, and loosen with a few table spoons of the pasta cooking water.
- Once the salmon is cooked, remove any skin or bones and flake it into large pieces. Drain the pasta and broccoli, and throw everything together in a large bowl, stirring in the creme fraiche and parmesan mixture. Serve immediately.
