A tomato & cheese salad. Make small balls of mozzarella using a melon baller or cut into 1.5cm cubes.
Ingredients
¼ cup | Basil leaves (Main) |
1 clove | Garlic, crushed |
3 Tbsp | Extra virgin olive oil |
¾ cup | Cherry tomatoes, ripe (Main) |
¾ cup | Buffalo mozzarella, small balls or cut into 1.5cm cubes (Main) |
1 pinch | Chilli flakes |
Directions
- Whizz half of the basil with the garlic, salt and olive oil in a small food processor to make a dressing.
- In a bowl, combine the tomatoes, mozzarella balls, chilli flakes and the remaining basil. Add the salad dressing and stir gently to combine. Serve in individual glasses or bowls.
