This strong and tart cocktail is a great start to an evening.
For the cocktail
2 scoops | Ice cubes |
60 ml | Gin (Main) |
2 small | Lemons, juiced |
4 Tbsp | Sugar syrup, rosemary infused (recipe below) |
2 sprigs | Rosemary, to garnish |
2 servings | Soda water, to top up the glass |
Rosemary sugar syrup
½ cup | White sugar |
½ cup | Water |
2 sprigs | Rosemary |
Directions
To make the rosemary sugar syrup
- Combine all ingredients in a small saucepan and gently heat until the sugar is dissolved. Allow to cool, then remove the rosemary sprigs before using. Will keep in the fridge for a couple of weeks.
To make the cocktail
- Take two small glasses and fill with ice.
- Add gin, lemon juice and 4 tablespoons of rosemary syrup. Stir in the glass to combine.
- Add a splash of soda water and garnish with a sprig of rosemary.
