Directions
- Place sausages in a saucepan of cold water. Bring to the boil over high heat, then turn down heat and simmer for 5 minutes. Drain sausages and allow to cool a little.
- Heat oven to 220C. Wrap a slice of bacon around each sausage and arrange in a roasting pan. Cut kumara and onion into wedges and scatter with the bay leaves around the sausages. Drizzle with oil, season with salt and pepper and roast for 30-40 minutes.
- Cut apple into wedges and scatter over the sausages and roast for a further 20 minutes, until the sausages are browned and the apple caramelised.
