As much as I love a big dinner party, it’s also great to have a more low-key affair, and having a table full of platter-type food and snacks is one of my favourite ways to eat, like these roast asparagus and prosciutto rolls.
Ingredients
1 bunch | Asparagus, woody ends snapped off (Main) |
75 g | Prosciutto, in strips approx 2cm wide |
1 Tbsp | Parmesan cheese, grated |
1 drizzle | Oil, use a good quality variety |
Directions
- Preheat oven to 200C. Cut asparagus spears in half, keeping the two pieces together.Wrap each pair of asparagus pieces in a strip of prosciutto, tucking it under to ensure it stays together.
- Lay each roll on a baking tray lined with baking paper. Drizzle over the oil (any oil would work here, but I used a good-quality walnut oil for a little flavour) and then sprinkle over the parmesan.
- Grill for approx 15 minutes until the spears are slightly crisp. Serve on a platter or hand around as a canapé.
