Ingredients

1 Tbsp	Rhubarb syrup, per Champagne flute, see below (Main)
1 serving	Prosecco sparkling wine, Champagne or your bubbles of choice, chilled (Main)

Directions

1. Add 1 Tbsp rhubarb syrup to a Champagne flute.
2. Top with the bubbles of choice.

To make rhubarb syrup, you can:

1. Follow this recipe forrhubarb rose syrup
2. Use the syrup from home-stewed orbaked rhubarb
3. Look for Aroha rhubarb cordial in speciality food stores
