Simple, yet amazingly tasty.
Ingredients
3 pieces | Free-range boned & skinned chicken thighs (Main) |
1 large | Onion |
3 large | Red capsicums |
1 Tbsp | Paprika |
2 tsp | Caraway seeds |
1 cube | Beef stock |
Directions
- Pre-cook the chicken thighs and de-bone or use any chicken you like. Chop the onion and capsicums, saute the onions until translucent, then add the capsicums and spices to the pan. Season with salt and pepper to taste. Add the stock and chicken and cover and simmer till cooked. Traditionally you add a dollop of sour cream to thicken it a bit, or skip the sour cream and serve as is, with small pasta, shells are good. Very simple to make, few ingredients but so tasty. Does take a fair amount of capsicums though so I wait until mine are ready in the garden, or use ones from the garden I have frozen for winter.
