Kaye Hodge wrote that her quiche recipe is an absolute winner because it’s easy to prepare, the selected ingredients give it a twist and it is lower on calories and carbohydrates because it is crustless. Kaye, you are right, it is all of these things and our reader recipe of the month. It’s a tasty number that combines asparagus with three of its friends — parmesan, lemon and macadamia nuts. We loved it.
Ingredients
5 large | Eggs |
2 ½ cups | Asparagus, diced (Main) |
½ cup | Red onions, finely chopped |
½ cup | Parmesan cheese, grated |
2 Tbsp | Lemon juice |
1 | Lemon, freshly zested |
¼ cup | Macadamia nuts, finely chopped and roasted |
Directions
- Heat oven to 180C.
- Place the eggs into a medium-sized bowl. Beat well, then carefully combine the remaining ingredients. Season with salt and freshly ground black pepper.
- Pour the mix into a lightly buttered quiche dish (23cm) and bake for 45 minutes or until the filling is well set.
- Serve with a salad and some fresh bread. We topped ours with some parmesan shavings too.
