This recipe came from Rose Millener who was a finalist in a Bite reader afternoon tea competition. Rose says it captures the essence of summer in the freshness of the basil from her garden and the judges agreed. Perfect for afternoon teas and for cocktail parties. The recipe was made and photographed by Bite. We added a little more mayonnaise to Rose's original recipe.
Ingredients
6 slices | Soft white bread, or multigrain |
¼ cup | Mayonnaise |
3 Tbsp | Basil leaves |
3 Tbsp | Pine nuts |
50 g | Chicken, cooked (Main) |
1 serving | Paprika, to garnish |
Directions
Cut crusts from bread (reserve them for making breadcrumbs or meatballs). Mix other ingredients and spread on bread. Make rounds of sandwiches. Cut into fingers. Serve on a bed of lettuce.
