Ingredients
4 pieces | Streaky bacon (Main) |
3 tsp | Balsamic creme, (dressing) |
250 g | Cherry tomatoes, halved |
2 | Shallots, diced (Main) |
¼ cup | Chicken stock |
300 g | Ravioli, pesto and ricotta style or similar (Main) |
2 cups | Rocket leaves, chopped |
Directions
- Microwave the bacon until crisp, about three minutes. Chop.
- Meanwhile, cook the ravioli according to the packet instructions.
- Heat the dressing in a large frying pan on medium-high.
- Add the tomatoes and shallots. Cook, stirring, until the shallots are tender.
- Add the bacon and stock and cook for two minutes.
- Add the hot ravioli and rocket and mix well.
