*"Hospo”, short for hospitality, is a term used regularly in the hospitality industry. Chand and Sid Sahrawat own the restaurants, Sidart and Cassia, so their daughter Zoya has been part of the hospitality industry from day one, hence the term “hospobaby”.
Ingredients
1 drizzle | Olive oil |
1 | Flour tortilla |
30 g | Ham, cured, thinly sliced, I use parma or prosciutto (Main) |
50 g | Cheese, grated |
100 g | Goat's cheese, or queso fresco |
1 | Spring onion, finely sliced |
1 bunch | Coriander, small |
4 slices | Jalapeno chilli, pickled green, cut up finely |
Directions
- Heat a pan and drizzle with olive oil.
- Pile up all the ingredients (leave out the jalapenos for the little people) on to 1 half of the tortilla. Fold the other half over and grill in the pan. Take off the heat once light brown in colour and slice into 3 wedges
- Serve with salsa, or ketchup for hungry little mouths.
