Sometimes the oldies are still the best. This is the sandwich version of an 80s prawn cocktail from Lucy Heaver and Aisling Coughlan's cookbook In Bread:70 Brilliant Sandwich Recipes.
For the marie rose sauce
2 Tbsp | Whole egg mayonnaise |
1 Tbsp | Tomato ketchup |
1 drizzle | Lemon |
For the sandwiches
16 | Cooked prawns, large ones, shelled and deveined (Main) |
4 slices | Bread, cut 2.5cm thick, spread with butter (Main) |
2 handfuls | Iceberg lettuce, shredded |
Directions
- To make the marie rose sauce, combine the ingredients in a small bowl and season well with black pepper. There will be enough salt in the mayo and tomato ketchup without needing to add extra. By all means adjust the quantities here to your liking: lemon juice will add tartness and extra ketchup will make it sweeter.
- Chop the prawns and add to the sauce, mixing well to combine. Set aside in the fridge for 10 minutes for the flavours to develop.
- Butter the bread and spoon the prawn mixture on 2 slices of bread. Arrange a handful of lettuce on the prawns and place the remaining bread on top.
