Potato Frittata With Smoked Salmon

Ingredients

1 ¼ kgsFloury potatoes
2 TbspOlive oil
2 clovesCrushed garlic
1 to tasteSalt & freshly ground pepper
1Leek
¼ cupParmesan cheese, grated
¼ cupParsley, chopped
1 cupTasty cheese, grated
150 gSmoked salmon pieces (Main)
6Large eggs
½ cupMilk

Directions

  1. Preheat the oven to 190 degC. Lightly oil a 30cm flan dish or baking dish.
  2. Wash and dry potatoes and cut into chunky, chip-sized pieces.
  3. Place in a roasting pan with olive oil, garlic, salt and pepper.
  4. Roast for 15 minutes. Add the washed and sliced leek and continue roasting, until just tender.
  5. Place vegetables in a large bowl with the cheese and parsley. Combine carefully.
  6. Place half the vegetable mixture into the prepared baking dish. Dot with the salmon pieces then cover with the remaining vegetable mixture.
  7. Whisk the eggs and milk with salt and pepper to taste.
  8. Pour over the ingredients to within 1cm of the top.
  9. Bake for 20 minutes.
  10. Cover with foil and bake for a further 20-30 minutes or until cooked in the centre.
