Pour into decorative bottles with a simple ribbon to make into this dressing into a special gift. It's delicious over chicken, couscous, or even icecream.
High in vitamin C, this pretty fruit is easy to deal with and is great sprinkled over a salad and fabulous with cheese. Cut in half like an orange and squeeze the pips and juice into a bowl. One fruit will yield approximately one cup of pips and juice.
Ingredients
2 | Pomegranates, seeds and juice removed (Main) |
1 cup | Sugar |
½ cup | Pomegranate molasses (Main) |
½ cup | Water |
1 tsp | Dijon mustard |
1 | Orange, juice and zest |
2 Tbsp | Red wine vinegar |
Directions
- Into a medium-sized pot place pomegranate seeds and juice. Add sugar, molasses, water, mustard, orange and vinegar.
- Bring to the boil and simmer for 10 minutes, until seeds are completely soft.
- Pour through a fine strainer and discard pips. Pour into clean, sterilised bottles and seal.
