This dairy-free smoothie uses fresh coconut milk which is sold now for drinking. Combined with fruit and coconut yoghurt, it makes a refreshing and nutritious breakfast or snack for later in the day.
Ingredients
1 | Banana, frozen (Main) |
1 slice | Pineapple, cut into chunks (Main) |
½ | Lemons, zest and juice |
1 sprinkle | Ginger, freshly grated |
1 cup | Coconut yoghurt (Main) |
½ cup | Coconut milk, use up to 1 cup (Main) |
Directions
- Blend frozen banana and fresh pineapple, the lemon zest and juice, freshly grated ginger, coconut yoghurt and coconut milk until smooth and pour into a cold tall glass or divide it between 2 glasses.
