The Edmonds Cookbook has screeds of recipes for more picnic pleasers. Here's their classic peanut brownie recipe with a few extra add-ins from the cupboard.
Ingredients
125 g | Butter |
1 cup | Sugar |
1 | Egg |
1 ½ | Plain flour |
1 tsp | Baking powder |
1 pinch | Salt |
2 Tbsp | Cocoa powder (Main) |
1 cup | Roasted peanuts (Main) |
¾ cup | Chocolate chips (Main) |
1 handful | Dried cranberries |
Directions
- Cream butter and sugar until light and fluffy. Add egg and beat well.
- Sift flour, baking powder, salt and cocoa together. Mix into creamed mixture.
- Add peanuts, chocolate and dried cranberries and mix well.
- Roll tablespoonsful of mixture into balls. Place on greased oven trays. Flatten with a floured fork. Bake at 180C for 15 minutes.
