This is one of my favourite salad treats and its so simple and easy to make!
Ingredients
6 | Scallops (Main) |
100 g | Rindless bacon (Main) |
½ bag | Mixed salad leaves |
1 tsp | Butter |
Salad Dressing
1 Tbsp | Extra virgin olive oil |
½ | Lemons |
1 tsp | Dijon mustard |
0 | Salt & freshly ground pepper |
Directions
- Combine ingredients for the dressing and set aside.
- Heat a pan and pan-fry the bacon till crispy. Remove and drain on paper towels. Melt the butter in the same pan till hot and foamy and sear the scallops till opaque and golden brown on both sides.
- Arrange the salad leaves on a plate and transfer the cooked scallops on top. Drizzle the dressing over and sprinkle the crispy bacon on top. Easy and delicious!
