Ingredients
1 to drizzle | Olive oil |
4 | Hapuka fillets (Main) |
1 to taste | Vanilla and herb sea salt, (I used Equagold available from gourmet food stores) |
175 g | Artichokes, (jar in olive oil) |
1 | Lemon, (wedges to serve) |
Directions
- Heat a fry pan, then add 1 Tbsp of olive oil. Season each fillet with vanilla salt and pan fry two at a time. Cook for 3 or 4 minutes on each side depending on the thickness of the fish.
- Transfer the fish to serving plates. Add the jar of artichokes to the pan and warm. Serve the artichokes and lemon with the fish.
