Try this easy to prepare, colourful salad using Kerikeri oranges.
Salad
1 | Avocado |
2 | Kerikeri oranges |
3 | Bacon rashers |
1 handful | Flat leaf (Italian) parsley |
1 handful | Rocket leaves |
Dressing
2 Tbsp | Olive oil |
2 Tbsp | Mustard |
1 Tbsp | Vinegar |
1 tsp | Worcestershire sauce |
1 | Orange |
1 | Lemon |
Directions
- Cut an avocado and two Kerikeri oranges into cubes. Add 3-5 rashers of cooked bacon (cut into strips), the zest of one of the oranges, Italian parsley leaves, and a big handful of rocket.
- Make a salad dressing by shaking 2 tbsp mustard, 2 tbsp olive oil, 1 tbsp good vinegar, 1 tsp Worcestershire sauce, and the juice of an orange and a lemon in a jar.
- Add a generous amount of dressing to the salad, season to taste and toss gently.
