This dish is deceptively easy, tasty and healthy. Make it with any vegetables you may have to hand and enjoy it with a simple salad.
Ingredients
2 | Bacon rashers, roughly chopped (Main) |
1 small | Onion, finely chopped |
50 g | Grated cheese |
3 | Eggs (Main) |
200 ml | Milk |
½ tsp | Dried oregano |
¼ tsp | Cayenne pepper |
1 bunch | Asparagus, or beans (Main) |
8 | Cherry tomatoes, halved |
1 tsp | Olive oil |
Directions
- Heat the oven to 180C. In a frying pan over a high heat, saute the bacon until it browns and begins to go crisp. Reduce the heat to low, add the onion and cook for a few minutes until soft and translucent.
- Combine the cheese, eggs and milk in a bowl. Add the , oregano and cayenne pepper and season with a good pinch of salt and pepper.
- Add the onions to the egg mixture and stir to combine.
- Pour the mixture into a greased quiche or tart dish with the tomatoes and asparagus or beans. Bake for 35-40 minutes until golden brown and just firm in the centre.
