My mums memory comes alive with the aroma and taste of the meatloaf I had as a child. I love to cook the familiar dish for the next generation in our family (my children) as they just love it - even though it has vegetables! I hope to give each child a recipe book when they leave home with Mum's Mega Meatloaf and other family favourites.
Ingredients
1 kg | Beef mince (Main) |
1 packet | Sausage meat |
1 large | Onion, chopped finely |
1 cup | Mixed vegetables, Cooked |
1 large | Carrot, Grated |
1 cup | Breadcrumbs |
1 | Salt, To taste |
1 | Pepper, To taste |
2 cubes | Beef stock, crumbled OXO |
4 Tbsp | Tomato sauce |
3 Tbsp | Worcestershire sauce |
2 | Eggs, without shells! |
Directions
- Turn Oven on 190 degrees
- Mix all ingredients by hand in a oven proof dish / casserole dish.
- Cook for45min-1hour or until meat juices run clear and meatloaf has shrunk away from sides of dish.
- Leave to cool before slicing. Serve with mash potatoe & garnish :)
