This recipe is adapted from my mum's Cheesy rice pie. Pies are often encased in a hot-water crust pastry,but this one uses just cheese,herbs and spices for its casing.This is quick to make and makes for a filling meal out of a few ingredients readily available on hand or is inexpensive to buy.As it is a fairly substantial dish,serve this with a simple dressed green or tomato slalad.There can be numerous variations of this pie with its layers of vegetables and spices.....just mix and match the vegges to your family's preferences.Since this one is a microwave recipe,you could easily save on power too!.
Ingredients
3 cups | Long grain rice, I used Basmati. (Main) |
2 tsp | Salt, or to taste |
1 tsp | Ground black pepper |
5 ¾ cups | Water |
2 large | Eggs |
3 cups | Tasty cheese, or any cheese of your cjoice |
1 large | Onion, chopped finely |
½ cup | Potatoes, grated |
½ cup | French green beans, finely sliced |
¼ cup | Broccoli, chopped into tiny fine florets |
2 Tbsp | Vegetable oil, any vegetable oil |
4 Tbsp | Water |
1 Tbsp | Chopped parsley, chopped fine |
¼ cup | Capsicums, any color of your choice |
1 Tbsp | Paprika |
1 Tbsp | Curry powder |
Directions
- Wash rice well,drain and combine with salt and water in a microwave safe cooker and boil covered with kitchen towel for about 20 mins or until all the water is absorbed.Let it rest covered for 5 minutes.Fluff up the rice. Beat eggs and mix into rice with 1.5 cups cheese. Press into greased bottom and sides of a deep microwavable pie dish.
- In another bowl take chopped onion,stir in 2 tbsp tsp oil and 4 tbsp water and cook on low for 2 minutes and add grated potato and cook for further 1 minute.Add curry powder and cook for further 1-2 minutes. Add broccoli and the mixed veggies,cover and cook on high for 6-8 minutes,stirring once.Drain the vegetables fully. Now layer the cooked veggies evenly over the rice.Spread the left over 1/2 cup cheese over the rice layer. Sprinkle Paprika all over and put it in the Microwave. Cook on medium power for about 10 minutes . Garnish with chopped parsley and serve hot! Serve with a simple dressed salad of your choice.
