The standard muesli slice is vamped up with the addition of "superfruit" goji berries and the "one a day keeps cancer away" brazil nuts. Forget about the generous amount of butter and it could practically be health food - at least good enough to convince you have another dainty slice ... Makes 24 pieces
Ingredients
1 cup | Rolled oats (Main) |
¾ cup | Sultanas |
½ cup | Berries, dried goji, roughly chopped |
1 cup | Brazil nuts, chopped |
2 cups | Plain flour |
½ cup | Desiccated coconut |
½ cup | Pumpkin seeds |
½ cup | Sunflower seeds |
220 g | Butter |
½ tsp | Salt |
1 | Orange, finely zested, plus juice of 2 oranges |
½ cup | Golden syrup |
Directions
- Preheat oven to 180C. Line a 20 x 30cm slice tin with baking paper.
- In a large bowl, mix together the goji berries, sultanas, oats, nuts, coconut, pumpkin and sunflower seeds, flour and salt.
- In a saucepan, heat together the juice and zest, butter and golden syrup until melted. Pour into the dry ingredients and mix until combined. Press into the lined tin and bake for 30 minutes or until golden. Slice while warm.
