This is a healthy loaf that is not sweet, so you need to think of it more as a bread. I make it to use up the packets of muesli that flounder around in the cupboard, no one eating them because all the good bits have gone. It depends on how sweet your muesli was to start with, but if you do want it sweeter add a couple of tablespoons of honey. Use full fat milk and yoghurt to help prevent it being too dry. It’s great sliced for lunch boxes or toasted for breakfast.
Ingredients
2 cups | Wholemeal flour |
2 tsp | Baking powder |
1 tsp | Mixed spice |
1 cup | Muesli (Main) |
¼ cup | Greek yoghurt |
1 cup | Milk, full fat |
1 | Beaten egg |
1 ½ cups | Grated carrot |
1 cup | Chopped dates, or other dried fruits (if your muesli still |
contains lots you won't need this much but it is | |
still nice to add ½ cup dates for sweetness) |
Directions
- Heat oven to 170C. Grease and line a loaf tin.
- Sift the flour, baking powder and mixed spice into a bowl. Mix in the muesli.
- Mix yoghurt, milk, egg, carrot and dates into another bowl. Then pour in to dry ingredients and stir to just combine.
- Pour into the loaf tin and bake for 45 minutes to 1 hour until cooked through.
