This meatloaf is made with beef and is sweetened with banana which also keeps it moist and provides extra nutrients. Three medium bananas produce about 1 cup of mashed banana. It is served with a chilli and lime-spiked salsa.

Ingredients
1 kg | Lean beef, minced (Main) |
1 small | Shallot, diced |
1 | Egg, lightly beaten |
1 cup | Long grain rice, cooked |
2 Tbsp | Mustard, already prepared |
2 Tbsp | Worcestershire sauce |
1 cup | Mashed banana, approx. 300g (Main) |
Directions
- Preheat the oven to 180C. Lightly grease a 23cm x 12cm loaf pan.
- Combine all the ingredients in a large bowl then pack into the loaf pan.
- Bake for about 50 minutes or until cooked.
- Great served with a salsa prepared from diced banana, green kiwifruit and chilli seasoned with lemon juice, sugar, chopped coriander, salt and pepper to taste.
