Based on Warren's fantastic soda pop scone recipe, add a few extras to make these delightful mini scones.
Ingredients
1 ½ tsp | Baking powder |
4 cups | Self raising flour |
1 pinch | Salt |
1 cup | Cream |
330 ml | Lemonade, bottle (or soda water for a less sweet dough) |
200 g | Dates, chopped, pitted |
1 | Orange, juice of |
1 | Rum, or 2 capfuls |
5 Tbsp | Jam, use your favourite jam or preserve |
Directions
- To thesoda pop sconedough recipe (ingredients included above), gently fold through 200g chopped, pitted dates, the juice of 1 orange, a capful or two of rum and a few Tbsp of your favourite jam or preserve.
- Spoon into a greased 24-hole mini muffin pan and bake in a hot (220C) oven for 20 minutes, until golden. This will make 48 mini scones.
