This is gluten and dairy-free. Use mini meringue nests or the larger ones, depending on appetites and number of diners. You may need to increase the ingredients.
The nests are available from the bakery department of your supermarket.
Ingredients
10 | Mini meringue nests, use up to 12 (Main) |
¾ cup | Coconut yoghurt, thick, I used Cathedral Cove Naturals (Main) |
¾ cup | Strawberries, diced (Main) |
10 | Blueberries, use up to 12 |
10 small | Mint leaves, use up to 12 |
Directions
Place the meringues in a circle on a flat plate or tray. Spoon the yoghurt into the centres. Top with the berries and mint leaves.This should be prepared at least 1 hour before enjoying or up to 8 hours.
