A citrusy sweet and spicy marinade perfect for pork chops or tenderloins, flank or skirt steaks, chicken thighs or wings
Ingredients
1 tsp | Cumin seeds |
1 tsp | Fennel seeds |
1 tsp | Sichuan peppercorns |
1 tsp | Cayenne pepper |
1 tsp | Smoked paprika |
1 tsp | Salt |
1 | Grapefruit, or use 2, freshly zested, juiced and fleshed out (Main) |
½ cup | Brown sugar |
3 cloves | Garlic, smashed |
1 handful | Fresh coriander, small, leaves only |
Directions
- Lightly toast and grind cumin seeds, fennel seeds and sichuan pepper. Add cayenne pepper, smoked paprika and salt.
- Add the grapefruit zest, juice and flesh to a food processor with the spices, brown sugar, garlic and coriander. Blitz until smooth.
- Marinate meat for 1-3 hours (or overnight), then grill or roast accordingly.
