This mascarpone and fruit mess is a one-bowl wonder with a few fresh ingredients. It is bound to impress. Use whatever fruit is in season or lightly stewed fruit. So delicious and simple, this will become a regular go-to recipe.
Ingredients
100 g | Mascarpone (Main) |
½ cup | Greek yoghurt (Main) |
1 cup | Fruit, whatever is in season; we used a mix of sliced apricots and blueberries (Main) |
1 cup | Crushed meringues, roughly crushed (Main) |
2 sprigs | Mint, to garnish |
Directions
- Into a large bowl combine the mascarpone, yoghurt, meringues and fruit.
- Spoon into two elegant serving glasses. Decorate each with a sprig of mint.
