This has to be the best shortbread ever. As a Hospice Community Nurse my first ever visit was to an old lady living on her own. Her house was a disaster, but the shortbread she gave me with a cup of tea was amazing. I asked her for the recipe and have been making it regularly ever since. At Xmas I roll and cut it with Xmas cookie cutters, other times I just cut it in fingers.
Ingredients
250 g | Butter, Chopped |
110 g | Caster sugar |
2 tsp | Vanilla essence/extract |
300 g | Standard flour |
75 g | Rice flour |
½ cup | Macadamia nuts, Ground (Main) |
Directions
- Preheat oven to 160C. Lightly grease oven trays.
- Beat butter, sugar and vanilla together until light and fluffy. Stir in remaining ingredients and knead just until smooth.
- Roll dough between two sheets of baking paper to 1cm thickness. Cut either with cutters or into fingers. Prick with a fork and sprinkle with extra sugar.
- Bake 20 minutes or until pale straw coloured. Stand for 10 minutes before transferring to a rack to cool.
