Here’s something perfectly nutritious to take to work tomorrow. Paneton French bakery have come up with a clever solution to producing your own perfect croissants. Their ready to rise minis in a box of 12 are a frozen product that you simply defrost overnight, then bake fresh in the morning. Of course they are made with pure New Zealand butter, so to counterbalance this I’ve packed these slightly indulgent croissants with healthy deliciousness — the perfect packed lunch.
Ingredients
4 Tbsp | Hummus |
8 | Croissants, mini, paneton (proved and baked) (Main) |
1 cup | Carrot, grated |
1 | Avocado, ripe, sliced |
1 cup | Beetroot, peeled, grated, raw |
4 | Eggs, hard boiled |
3 Tbsp | Pesto, herb |
Directions
- Slice croissants in half and lightly toast under the grill.
- Spread hummus on base and build layers of carrot, avocado, beetroot, eggs and pesto.
- Season with salt and freshly ground pepper, wrap and pack for lunch.
