Lentil and quinoa salad
1 cup | Brown lentils, cooked (Main) |
1 cup | Quinoa, cooked (Main) |
1 cup | Basil, chopped |
1 cup | Parsley, chopped |
¼ cup | Coriander, chopped |
¼ cup | Mint, chopped |
1 | Spring onion, finely chopped |
½ cup | Cucumbers, chopped |
3 | Medjool dates, fresh, sliced (optional) |
½ cup | Red capsicums, chopped |
½ cup | Cashew nuts, raw |
Dressing
3 Tbsp | Olive oil |
½ | Lemons, juice of |
Directions
- Mix all ingredients together.
- Pur dressing over and season with salt and pepper.
