There’s been some great recipes posted to the reader recipe section of bite.co.nz recently. NgaireMPhillips had me making this deliciously sticky lemon slice.
Base
225 g | Butter, softened |
½ cup | Icing sugar |
2 cups | Flour, sifted |
Topping
1 ½ cups | Sugar |
4 small | Eggs |
2 | Lemons, zested (Main) |
¼ cup | Flour, sifted |
1 tsp | Baking powder, sifted |
⅓ cup | Lemon juice |
Directions
- Heat oven to 170C. Cream together butter and icing sugar. Then add flour. Press into a greased and lined sponge roll tin. Bake for 15 minutes.
- Meanwhile make the topping. Beat sugar and eggs together until creamy and thick. Mix in lemon zest, flour, baking powder, and lemon juice. Stir until smooth.
- Pour mixture over partly cooked base and cook a further 30 minutes or until golden and slightly firm.
- Cool in the tin and cut into 24 pieces (less for bigger serves). Serve sprinkled with icing sugar or with aspoonful of lemon yoghurt for dessert.
