Revive Cafe's Jeremy Dixon has broken in to the US market with his own TV series, Cook:30 — cooking delicious wholefood plant-based meals from scratch in 30 minutes. The accompanying cookbook Cook:30 is on sale here and those looking to put healthy meals on the table every day are snapping it up. This is one of the smaller, more basic recipes in the book. It makes a good accompaniment to many dishes and illustrates the very practical nature of the book.

Ingredients
1 ½ cups | Quinoa (Main) |
3 cups | Water, boiling |
2 tsp | Lemon zest (Main) |
2 Tbsp | Lemon juice (Main) |
½ tsp | Salt |
1 Tbsp | Olive oil |
2 Tbsp | Sliced almonds |
Directions
- Put the quinoa in a medium saucepan with boiling water. Put the lid on and bring back to the boil.
- Turn the heat down and simmer for 12 minutes or until the water has disappeared.
- Add lemon zest and juice, salt and olive oil and stir.
- Serve garnished with sliced almonds.
