Ingredients
100 g | Butter, plus 20g extra |
2 | Eggs |
1 Tbsp | Honey (Main) |
½ cup | Caster sugar |
¼ tsp | Salt |
½ tsp | Vanilla essence/extract |
1 tsp | Lemon, zest finely grated (Main) |
100 g | Standard flour |
1 tsp | Baking powder |
1 to serve | Icing sugar |
Directions
- In a saucepan, melt the butter and honey together over a gentle heat. Let cool.
- Put the eggs, sugar, salt, vanilla, lemon, flour and baking powder into a bowl and beat with electric beaters until just combined then add the butter and honey mixture and mix. Leave the mixture for an hour to rest.
- Preheat oven to 18 degC. Melt the remaining butter and use to brush the madeleine tray. Dust with flour and shake off any excess. Spoon in the mixture and bake for 10 minutes. Cool slightly before removing to a cooling rack and dusting with icing sugar.
