This is zesty and delicious. I spoon this over puddings or ice cream.

240 g | Butter |
7 | Lemons (Main) |
400 g | Caster sugar |
7 | Eggs |
Directions
- Juice and zest the lemons and put aside.
- Create a water bath over a pot of water. Keep the element on medium-low so that the water is simmering, not boiling.
- Stir the butter and sugar until well combined.
- Then add the lemon juice, lemon zest. Make sure you're stirring the whole time. It may look like it has curdled, but give it time. It will form a curd-like texture when it is sufficiently warmed up.
