Ingredients
850 g | Kumara, thinly sliced & peeled (Main) |
8 pieces | Pancetta (Main) |
1 to taste | Salt & freshly ground pepper |
1 cup | Cream |
⅓ cup | Parmesan cheese, grated |
Directions
- Preheat oven to 180 degC. Layer the kumara, pancetta, salt and pepper in a 2 cup-capacity ovenproof dish and place on a baking tray.
- Place the cream in a saucepan over medium heat and bring to the boil. Pour this over the kumara and bake for 20 minutes.
- Sprinkle over the parmesan and cook for a further 10-15 minutes or until the kumara is cooked and the cheese is golden.
* This would be a great side dish for pan-fried steaks or roast chicken or pork.
