Tuck into Kokako’s delicious chickpea and red lentil Moroccoan burgers – they're hearty and healthy. This recipes makes around 5 medium-size patties.
Chickpea and lentil pattie
300 g | Chickpeas, cooked and cooled (Main) |
1 | Onion, finely chopped |
300 g | Red lentils, cooked and cooled (Main) |
2 | Garlic cloves, finely chopped |
1 handful | Fresh parsley, finely chopped |
1 handful | Fresh coriander, finely chopped |
1 Tbsp | Sesame seeds |
1 Tbsp | Sunflower seeds |
½ tsp | Chilli powder |
1 Tbsp | Tahini paste (Main) |
1 Tbsp | Cornflour, or use a gluten-free alternative |
1 tsp | Ground paprika |
½ | Oranges, zest |
1 to taste | Salt & freshly ground pepper |
For the burger
1 | Avocado, cut into wedges |
5 | Burger buns (Main) |
1 | Beetroot, raw and grated |
1 | Relish, choose your favourite |
1 | Hummus |
Directions
- Sweat off the garlic and onion in a hot pan with a little oil.
- Combine the remaining ingredients in a food processer and then pulse until combined.
- Shape into the patty size of your choice.
- Assemble the burger with the fillings and serve with a wedge of crunchy iceberg lettuce drizzled with your favourite dressing.
